Plant-based buckwheat waffles with chia seeds, cinnamon and a lightly crisp surface

Soaked chia seeds bind the batter, while buckwheat, starch and coconut oil produce a soft centre and lightly crisp edges.
Ingredients
For the waffle batter
- 2–3 tsp chia seeds
- 8–12 tsp water
- 50 g coconut oil
- 60 g sugar
- 200 g buckwheat flour
- 50 g cornflour
- 250 ml plant drink
- 1/2 packet baking powder
- 1/2 tsp cinnamon
- 1 tsp vinegar
Also
- a little neutral oil or coconut oil for greasing the waffle iron if needed
Method
Soak the chia seeds

Mix the chia seeds and water thoroughly in a small bowl. Leave for about 10 to 15 minutes, until the mixture becomes gel-like.
Mix the waffle batter

Gently melt the coconut oil and leave it to cool briefly. Combine the buckwheat flour, cornflour, sugar, baking powder and cinnamon in a large bowl. Add the plant drink, soaked chia seeds, liquid coconut oil and vinegar, then whisk to an even batter.
Prepare the waffle iron

Preheat a classic round heart-shaped waffle iron at a medium to slightly high setting, around three quarters of its maximum power. Lightly grease the iron if needed.
Cook the waffles

Spoon a suitable amount of batter into the centre of the lower plate, close the waffle iron and cook for about 4 to 6 minutes depending on the appliance, until evenly browned and easy to release. Repeat with the remaining batter.
